I'm loving granola these days and have been making a variation of my friend Bobbi's recipe. It's really easy and super yummy. I started another batch this morning then decided I didn't want to turn on the oven and heat up the house on an already hot day (what I wouldn't do for AC right now!), so set it aside to bake later. Here's what I put in mine...
Combine:
4 cups old fashioned rolled oats 1 cup unsweetened shredded coconut 1/2 cup or so pecans, chopped 1/2 cup or so almonds, chopped 1/2 cup or so walnuts, chopped 1/4 cup or so sunflower seeds 1/8 cup or so wheat germ 1/8 cup flax seedsWhisk together: 1/2 cup water 1/2 cup coconut oil 1/4 cup honey 1 Tbsp vanillaStir the oil mixture into the oat mixture. Pour into a 9 x 13 inch baking dish. Bake at 325 degrees F, stirring every 20 minutes or so until the mixture is toasted. It takes an hour or more, depending on how toasty you like your granola.When the mixture is cool, stir in some dried fruit. I've been using:
1/2 cup raisins 1/2 cup dried cranberriesbut you could use any dried fruit. I'd like to try it with dried cherries or maybe do a tropical version with mango and papaya. You can also substitute different nuts and seeds as desired.Eat! I've been having this for breakfast almost every day lately. I top mine with kefir or milk and some fresh fruit. Yum!
